good eats: strawberry cookies

You HAVE to try these. They are so easy and so so yummy. This is one of those pins that DID NOT go awry, unlike most of the “pinned it tried it moments I have”… (like the paper mache jewelry dish I spent about 7 hours on the other day that turned into a huge mess, paint on the carpet, and mod podge in my hair. Oh, and all along Clay is saying, “It looks so good! I can see it coming together!” Oh I love him.)

I am a little off track. These cookies are one of those moments where everything went according to plan. They require:

2 eggs

2 tsp. vanilla

1 stick butter

a strawberry cake mix.

Preheat oven to 350. Mix wet ingredients together. Add Cake mix. Chill the dough in the freezer for 10 minutes. Make 1 inch balls and place them on well greased pan. Bake 7-8 minutes. THAT’S ALL!


I used my favorite cream cheese frosting recipe…

2 oz. cream cheese

1 stick butter

2 tsp. vanilla

About 4 cups of powdered sugar, or however much you want depending on the thickness of the frosting.

Bring cream cheese and butter to room temp. Mix together with mixer, add vanilla. Mix again. Pour in your powdered sugar slowly and mix as you go until you get the consistency you like.

FROST AND EAT! (Sprinkles optional.)
